Soto ayam

Soto ayam is a yellow spicy chicken soup with lontong or ketupat (all compressed rice that is then cut into small cakes) and/or vermicelli or noodles, commonly found in  IndonesiaTurmeric is added as one of its ingredients to get yellow chicken broth. It is probably the most popular variant of soto, a traditional soup commonly found in Indonesian cuisine. Besides chicken and vermicelli, it can also be served with hard-boiled eggs, slices of fried potatoes, Chinese celery leaves, and fried shallots. Occasionally, people will add "koya", a powder of mixed prawn crackers with fried garlic or orange colored spicy sambalkrupuk or emping is a very common topping.
In this session, I share soto ayam recipe with very simple ingredients.


Ingredients:
chicken, boiled then shredded the meat
fresh cabbage
vermicelli
fine spices: garlic, shallot, turmeric, ginger, salt and nutmeg
lemongrass, lime leaves
instant chicken stock powder
celery, fine chopped
fried shallot

directions:
stir fry the fine spices until it smells good
add the spices into chicken boiled water
add lemongrass, lime leaves and instant chicken stock powder
add chopped fresh cabbage and shredded chicken meat
add vermicelli
cook until all ingredients is cooked
sprinkle with celery and fried shallot
