Kalio. If we hear this name of dish, we will never expect that this dish is also come from Minangkabau, West Sumatera. Some say, kalio is a beef meat dish like rendang but watery and caramellicious because using a lot of palm sugar.
So, i share my version of kalio today:
Ingredients:
Beef meat
lemongrass, lime leaves, salt, palm sugar, coconut milk,
Spices: red onion, red chilli, turmeric, ginger, coriander powder
How to cook:
1. Stir fry the fine textured mix spices, lemongrass and lime leaves
2. Add the coconut milk. Cook them until it boiled
3. Add the beef meat, salt and palm sugar
4. Cook until the meat cooked

Chicken Edition #14
My latest chicken project is so easy to cook, so simple and delicious. Adapted by chinese cooking methods, today i want to share my recipe called, " Chicken Fillet with Sour and Spicy Saute"
It's not just yummy. Very very simple to prepare and cook. With all ingredients is easy to find in the market. Here all the recipe:
Ingredients:
Chicken Fillet
Lime juice, salt, pepper powder
Fried oil
Dye ingredients:
egg
starch corn
chicken broth powder
Saute ingredients:
onion, red chilli, tomato ketchup, oyster sauce, sambals, sugar, starch corn and water
Direction:
1. Marinate the chicken fillet with lime juice, salt and pepper powder
2. The dye ingredients all mixed up. The marinated chicken fillet then put it on
3. Fried the chicken fillet until it cooked
4. For the saute, strir fry the onion, red chillies until smell came out. Add the tomato ketchup, oyster sauce, \
sambals and sugar. Mixed them. Add the starch corn solvent for the finish touch.
5. Add the saute into the chicken fillet
and you get your chinese dish at your home..... :)

Chicken Edition #13
Fireworks Chicken
Yup! I named this recipe chicken as "Fireworks chicken". Well, it is not because it made to celebrate something or use some flamable ingredients. It called as fireworks because it used a lot of hot spicy chilli. Even so spicy, but yummy in taste. So, here the recipe:
Ingredients:
- Chicken thighs
- Lime juice
- mineral water
- salam leaves, turmeric leaves
- galangal
Fine textured mix spices:
- Red onion, garlic, nutmeg
- turmeric, coriander, lemongrass
- ginger, salt, sugar
Saute:
- Red chillies, green cayenne pepper
- red onion, little dry shrimp
- salt, pepper powder, sugar, chicken broth powder
How to cook:
- marinate the chicken thighs with lime juice. Keep it on refrigerator
- cook the thighs with fine textured mix spice, salam leaves, turmeric leaves, galangal on mineral water.
- for saute, stir fry red chillies, green cayenne pepper, red onion. Add some little dry shrimp, salt, pepper powder, sugar and chicken broth powder
- add the chicken thighs and mixed them all

Chicken Edition #12
Chicken Fillet in Tomatoes.....
From many chicken project i have done, there's only two project used chicken fillet. If you remember my Ngohyong fried chicken and the last is this recipe: chicken fillet in tomatoes.
My recipe today is quite simple chicken recipe and of course easy to eat. I think this dish is suitable for children too. The taste is simpel dominating with tomatoes taste. Yup! exactly sour.
So here my recipe of Chicken Fillet in Tomatoes
Ingredients:
Chicken Fillet
Water to boil
Ginger, lemongrass
Red tomatoes, tomato ketchup
Salt, pepper, sugar
Big onion
Oregano, garlic powder
Chicken broth powder
Spring Onion
Margarine
Directions:
1. Boiled the chicken fillet with water, ginger, lemongrass and add a teaspoons of garlic powder
2. Stir fry the onion, add the boiled chicken fillet, tomatoes, tomato ketchup, salt, pepper and sugar
3. Add the oregano and mixed them all
4. For the last touch, add the slicing spring onion

White Snapper in Basil and Red Chillies
White Snapper is a kind of tropical fish found across Indo Pasific ocean and commonly known as seafood, so it caught commercially. Today, i will share recipe of white snapper for the first time. My recipe today is White Snapper in Basil and Red Chillies. If you read this, you fill find that this faboulous fish dish is served with basil leaves and red chillies. Simple flavour but of course yummy!
Ingredients:
White snapper fish fillet
Salt and lime juice for marinate
Lemongrass
Red cayenne pepper
Sugar, fish broth powder
Basil leaves
Water, vegetable oil
Coarse crushed spices: red onion, green chillies or red chillies, tomato
Directions:
Marinare the fish fillet with salt and lime juices. Keep it on refrigerator for 20 minutes
Fry the fillet
Stir fry the coarse crushed spices, add lemongrass, sugar, fish broth powder and red cayenne pepper
Add the fish fillet, mix them all
Add some water and last, the basil leaves

Chicken Edition #11
"Ayam Masak Kencur" is the chicken dish recipe i want to share this time. I have a little difficulty in translating this recipe in english because "Kencur" is a kind of herb originally from Indonesia. Some say "Kaempferia galanga" or "Aromatic Ginger", "Sand Ginger", "Cutcherry" or "Resurrection Lily" for the same herb. Javanese and Balinese cuisine use this herb as cooking spices. Combination between Kencur and other herbs create a wonderful spicy taste.
Ingredients:
Chicken thighs
Salt, gratered ginger, bay leaves, lemongrass, lime leaves
Coconut milk
Fine textured mix spices: garlic (grilled)
red onion (grilled)
red chillies (grilled)
red cayenne pepper (grilled)
Shrimp paste (grilled)
Kencur
Salt, brown Sugar
Directions:
Stir fry the fine textured mix spices, add the gratered ginger, bay leaves, lemongrass and lime leaves
Add coconut milk
Add the chicken thighs, cook with medium heat until it cooked

The most delicious food in the world: Rendang
Rendang is a spicy meat dish originally from Minangkabau West Sumatera, Indonesia. The popularity of Rendang coincided with the growth of Padangnese culinary in various region. Rendang or in western world known as "Caramelized beef curry" is rich in spices and took long time to cooking. But patience produce delicacy, so here my recipe of Rendang.
Ingredients:
Beef meat slices
Turmeric leaf, galangal, lemongrass
coconut milk: thick and fluid
Shredded coconut
Fine textured mix spices: red onion, turmeric, garlic, nutmeg, ginger, red chillies, salt
How to cook:
Slice the meat opposite the fiber
Mixed the meat slice with fine textured spices, turmeric leaf, lemongrass and galangan
Add the fluid coconut milk then cook on medium heat until the meat cooked
Add the thick coconut milk and after it seeped, add the roasted shredded coconut.
And you have your most delicious food in the world..... :)
